  1. Mix the first five ingredients together.
  2. Add the last 4 ingredients to a medium sized bowl. Add dressing and mix well.

When you cook the pasta, rinse in cool water so that it's not hot when you add the mix everything together.  Enjoy!

  1. Preheat oven to 350F. If using a really lean meat, prolly wanna use some non-stick spray on the loaf pan.
  2. Mix everything except ~1/2 C marinara sauce together. Place in loaf pan and either shape or prolly better, press so that it's even across the loaf pan.
  3. Bake for 25 minutes, then add remaining marinara sauce and bake another 25 minutes or until internal temp is correct for whatever meat you're using - 160F for ground beef, 165F ground turkey.

UPDATED: After receiving lots of mixed reader feedback, I've went back into the kitchen and reworked this recipe. I think you will be wonderfully surprised with the results! This recipe is inspired from a recipe in Gooseberry Patch’s Slow-Cooker Christmas Favorites. When I say stir it well during the cooking process, I mean stir it all around. Top to bottom, bottom to top...all around. Toward the end of cooking (the last hour or so), you will want to watch it very closely. I wasn't sure how long exactly this would take with reworking the recipe, it took right at 3 and a half hours for mine. If I would have left it for another 30 minutes, I am sure it would have been mush instead of perfection. So, I cannot stress enough, watch it closely. As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish. Instructions
  1. Preheat oven to 425F.
  2. Cook stuffing per package directions. Set aside.
  3. Butterfly pork loin roast and unroll, pound if needed so that it is evenly about 1/4" - 1/2" thick.
  4. Mix the chopped cherries and feta with the stuffing mix. Spread over inside of roast, leaving a small gap at the edges. Sprinkle the Gruyere evenly over the stuffing. Roll up the roast.
  5. Make a basket weave with the bacon. Lay the rolled roast on top of the bacon upside down, and fold the bacon over the roast. Flip right side up. Use toothpicks as necessary to keep the bacon in place.
  6. Bake for ~8 minutes, then reduce heat to 350F and bake for 65 -75 minutes or until internal temperature is 145F. Remove from oven, let rest for at least 10 minutes.
  7. Can add 50g gruyere cheese to sprinkle on top of the stuffing mix before rolling and baking.
  8. Tried shredded smoked cheddar instead of feta, and started sat 400F for 20 min, then decreased to 350F for 75 minutes. Think 60 minutes would have been enough.

I ran out of cherries, didn't realize that until I started to put it together, so I'm trying it with raisins this time.  I also forgot the gruyere, damnit.  We'll see how it turns out this time! Also, I'm going to try starting at a higher temp to crisp the bacon blanket (hopefully) then reduce heat to 350 to finish cooking.  Wish me luck!  (5.30.18)

 

I swapped out the smoked cheddar for smoked gouda, and subbed cranberries for cherries.  Was really good!  I also gave it 15 minutes at 425F, then dropped it to 350F for 40 minutes.  Turned out pretty good!  I had a slightly smaller roast, only 19.4oz, so the shorter cooking time worked great, and actually could have been about 5 minutes less for that size.  Didn't add baby spinach leaves, but that might add some additional moistness, though it didn't really need it this time.   (10.1.19)

  1. Make the marinara sauce. Add pizza sauce and let simmer together for a few minutes.
  2. While the sauce is cooking, cook the meat together, adding salt and pepper to taste. Cook the lasagna noodles per package directions, but don't drain.
  3. Preheat oven to 350F.
  4. Lightly spray the bottom of a 9 x 13 dish. Lay 3 noodles along the bottom of the pan so that it's completely covered by noodles. Spread about half of the meat and sauce mix evenly over noodles. Spread about half of the ricotta evenly over the meat and sauce. Sprinkle 1/2 of the cheddar cheese evenly over the ricotta. Sprinkle 1/2 of the mozzarella cheese evenly over the cheddar.
  5. Repeat that last step, place on baking sheet, and bake for 45 minutes, until the top is starting to brown and it's bubbly.

  1. Core the apples with an apple corer and make a hole big enough for the filling; then score around the middle of the apple with a sharp knife, to stop them bursting whilst cooking - although cooking apples may still burst.
  2. Mix the sausagemeat, sage, onion and breadcrumbs together to make a stuffing - season to taste with salt and pepper.
  3. Fill each hole with the sausage stuffing mixture, dot each apple with a little butter and then place the apples into an oven dish or a roasting tray, or alongside a roast chicken or roast pork joint.
  4. Add a little water to the dish to stop the juices burning and caramelising, and bake in a pre-heated oven 190C/375F/Gas 5 for 45 to 60 minutes - if adding to a roast chicken or roast pork dish, add them for the last 45 to 60 minutes of cooking. (Cooking time depends on the size of the apples)
  5. Baste the apples regularly with the juices in the dish and add a little water if they dry out, or baste with the meat juices. Once they are cooked, gently take them out of the pan using a slotted spoon, loosely cover them with foil and set aside for 5 minutes before serving.
  6. Serve them alongside roast chicken or roast pork - these savoury baked apples would also make a fabulous family supper dish when served with mashed potatoes and gravy. If there is any excess stuffing mixture left, then roll them into balls and bake for 30 minutes alongside the stuffed apples.
  7. NB: you can prepare them beforehand and keep them in the fridge in a covered dish until you need to bake them.

  1. Drain mackerel and remove the largest bones and the majority of skin. Break up in bowl, then add therest of the ingredient, mixing with a fork.
  2. Separate into 4 patties, about 3.5 oz. each. Cook for 4 minutes on a George Foreman grill, or ad a Tbsp of oil to a skillet and fry for 4-5 minutes each side.
  3. Serve hot by itself, or with tartar sauce. Or you could make a sandwich.

I wanted to make pot roast, but there are only two of us, and all of the recipes I found online called for 2 1/2 - 5 pound roasts. That's a lot for two people! So I made this version, much more suitable for 2 people, without a lot of leftovers. Enjoy!

  1. Remove roast from refrigerator about an hour before cooking - long enough for the roast to be about room temperature.
  2. Preheat oven to 325F.
  3. Heart oil in dutch oven to medium/medium-high heat. Pat roast dry and sprinkle salt and pepper on all sides, patting to help seasonings stick. Brown slightly on all sides - since it's a small roast and near room temperature, it won't take long on each side or you will start cooking it, maybe 45 seconds each side. Make sure to get every surface of the roast!
  4. Add sage and thyme to hot bouillon and mix well.
  5. Remove roast from dutch oven and drain excess fat. Place roast back in dutch oven and add hot bouillon, thyme, and sage. Make sure lid is on properly so that it hols all of the liquid and steam, and place in oven.
  6. Cook for 1 1/2 hours, then remove and add vegetables. Be sure to spread everything around so that it's totally cover with the liquid.
  7. Return to over and cook another 1 1/2 hours, or until roast is so tender it falls apart when you try to fork it.
  8. Move roast and vegetables from dutch oven to platter, and cover well to keep warm. Place dutch over with cooking liquid on burner on medium/medium-high heat. Add 2 Tbsp flour to liquid and whisk together. Let simmer until liquid is reduce to about 1/3 and gravy is thickened, whisking frequently.

  1. Pour the tuna in a small mixing bowl. Use a fork to break the tuna chunks into very small pieces.
  2. Add the basil, celery and lemon juice to the bowl. Use the fork to stir all the ingredients together till well mixed.
  3. Add extra virgin olive oil to moisten the tuna to your liking. I usually use between 1 and 2 tbsp. Season with salt and pepper to taste; sea salt and freshly ground pepper is best. Serve.
