Instructions
  1. Peel and cut the sweet potatoes into even chunks, about 1/2". Add to pot and boil, covered, for about 12-15 minutes or until very tender when poked with a fork. Drain.
  2. Mash potatoes. Add all but last two ingredients and stir until combined.
  3. Add the raisins and marshmallows once the sweet potatoes aren't too hot to melt the marshmallows. Serve.

  1. Preheat oven to 350F.
  2. Mix all ingredients together in a 9" square baking dish. I suggest placing the pan on a baking sheet to bake, covered, for 1 hour. Remove cover and continue baking for another hour.
  3. Prolly want to give a few minutes to cool a bit before eating.
  4. 1 serving is ~100g, about 3/4C.
Recipe Notes

Feel free to add barely cooked bacon pieces, and you can also use fresh diced onion and garlic, but I like that you can toss this together in just a few minutes with stuff that I at least usually have on hand all the time.  Enjoy!

  1. Preheat oven to 375F. Line baking sheet with foil.
  2. Split buns in half and spread out evenly on the baking sheet, outside of bun down. Spread ~1 1 1/2 Tbsp spoon on each bun pair. Sprinkle garlic powder and salt evenly over all each. SPread softened cream cheese over each piece.
  3. Bake for ~7-8 minutes, or until the butter is completely melted and bottoms are starting to brown. Spread the mozzarella &/or cheddar cheese over the top. REturn to oven and bake another 5 minutes or until top cheese(s) are melted.
  4. Let sit for a couple of minutes and serve.

  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Combine the butter, mayonnaise, green onions, garlic, Parmesan cheese, and Monterey Jack cheese in a large bowl. Cut each half of French bread into 4 pieces. Spread the cheese mixture evenly on the bread pieces.
  3. Bake in the preheated oven for 8 minutes. Set the oven to broil; broil until hot and bubbly, about 2 additional minutes.

  1. Melt the butter in a saucepan over medium heat.
  2. Add the flour and whisk until combined.
  3. Slowly stir in 1 cup of cream (or milk) and whisk until smooth.
  4. Stir in the remaining cream, salt and pepper. Whisk constantly until the mixture starts to thicken. This will take 3-5 minutes.
  5. Add in 2 cups of the shredded cheddar cheese and stir until smooth. Remove the white sauce from the stove.
  6. Preheat the oven to 400 degrees Fahrenheit.
  7. Spray a 9x13 pan with cooking spray.
  8. Place half of the potatoes in the greased pan. Cover them with the onions and half of the sauce.
  9. Place the remaining potatoes in the pan and then pour the remaining sauce overtop.
  10. Cover the pan with foil and bake for 40 minutes.
  11. Uncover the pan, sprinkle the remaining cup of shredded cheddar over the top and bake uncovered for an additional 15-20 minutes or until the top of the potatoes are lightly browned, the cheese is metled and the potatoes are tender. The exact timing will depend on how thick you have cut the potatoes.
  12. Top with fresh parsley, if desired. Serve warm.

Hot Baked Cinnamon Apples
These cinnamon apples taste like a cobbler or pie without the crust. I was looking for a recipe for Cinnamon apples and all I could find were recipes for baking the whole apple - not what I wanted. After much searching I finally came across this recipe - I unfortunately cannot remember the site. It can easily be reduced to 2 or 3 apples, just watch it as it cooks. We serve this over ice cream and it is delicious. It can also be used on pancakes, waffles, or all by itself.

  2. Place cut and peeled apples in a mixing bowl and gently mix all the ingredients together.
  3. Put apples in a non-stick pan; cover and place in the oven.
  4. Bake for 45 minutes, stirring at least once every 15 minutes.
  5. Once they are soft, cook for another few minutes to thicken the cinnamon sauce.
  6. I like to put everything into my baking dish and then mix it since there is less to clean up.

  1. Preheat oven to 350F. Line baking sheet with foil or parchment paper.
  2. Mix stuffing mix and beaten egg thoroughly. Make into patties, ~1/2" thick. Place on prepared sheet.
  3. Bake for ~12 minutes or until starting to brown and set. Remove from oven and flip.
  4. While the stuffing mixture is baking, mix ketchup, parmesan, Worcestershire sauce, garlic powder, onion powder, oregano, and basil together in a small bowl.
  5. Spread ~2 Tbsp of ketchup mixture on top. Sprinkle cheese over top. Return to oven for ~7 minutes or until cheese starts to melt, bubble, and/or brown.
  6. Remove from oven and allow to cool slightly before serving.

Never tried this before, basically wanted to use up some gruyere that I left out of another recipe (damnit).  Will update with notes after I've tried it to see what happens.  Hopefully it works well!

Instructions
  1. Preheat the oven to 375.
  2. Brown the sausage in a large skillet until completely cooked.
  3. Remove sausage and add onion and celery to pan and saute until starting to soften.
  4. Return sausage to pan, mix well and spice to taste.
  5. Drizzle with the maple syrup or honey.
  6. Cut each apple in half (don’t peel) and scoop out the seed area with a spoon or sharp knife to make each apple a “bowl.” Alternately, you can use a corer to remove most of the inside and leave the apples in tact (as pictured).
  7. Spoon some of the sausage mixture into each apple and place on the bottom of a large baking dish.
  8. Bake for 25-30 minutes until apples are cooked and fragrant.
  9. Remove and serve with salad.
  10. Enjoy!

  1. Core the apples with an apple corer and make a hole big enough for the filling; then score around the middle of the apple with a sharp knife, to stop them bursting whilst cooking - although cooking apples may still burst.
  2. Mix the sausagemeat, sage, onion and breadcrumbs together to make a stuffing - season to taste with salt and pepper.
  3. Fill each hole with the sausage stuffing mixture, dot each apple with a little butter and then place the apples into an oven dish or a roasting tray, or alongside a roast chicken or roast pork joint.
  4. Add a little water to the dish to stop the juices burning and caramelising, and bake in a pre-heated oven 190C/375F/Gas 5 for 45 to 60 minutes - if adding to a roast chicken or roast pork dish, add them for the last 45 to 60 minutes of cooking. (Cooking time depends on the size of the apples)
  5. Baste the apples regularly with the juices in the dish and add a little water if they dry out, or baste with the meat juices. Once they are cooked, gently take them out of the pan using a slotted spoon, loosely cover them with foil and set aside for 5 minutes before serving.
  6. Serve them alongside roast chicken or roast pork - these savoury baked apples would also make a fabulous family supper dish when served with mashed potatoes and gravy. If there is any excess stuffing mixture left, then roll them into balls and bake for 30 minutes alongside the stuffed apples.
  7. NB: you can prepare them beforehand and keep them in the fridge in a covered dish until you need to bake them.
