Instructions
  1. Heat oven to 350°F.
  2. For meat loaf, combine turkey, bread crumbs, onion, tomato sauce, egg, garlic, Parmesan cheese, pepper and red pepper flakes thoroughly in a large bowl.
  3. For filling, mix spinach and cream cheese in a separate medium bowl.
  4. Press meat mixture into an 8 x 14-inch rectangle about 1/2-inch thick on a large sheet of waxed paper.
  5. Spread filling over turkey, leaving a 3/4-inch border around edges.
  6. Roll from the short end in jellyroll fashion.
  7. Press turkey over filling at both ends and seal.
  8. Place seam side down in open baking dish/roasting pan.
  9. Sprinkle top with additional Parmesan cheese.
  10. Bake 30 minutes. Spread 3/4 C tomato sauce over top until well covered, sprinkle with salt, pepper, and garlic powder. Bake another 30 minutes, until meat thermometer inserted in center of meat loaf reads 160°F.
  11. Cut into 1-inch thick slices to serve.
Recipe Notes

Can add 1/2 C shredded mozzarella and 4 oz. cream cheese to spinach.

  1. Butterfly pork loin and hit with a hammer to even the loin out a bit, to about 1/4" -1/2".
  2. Heat olive oil in skillet, add spinach. Sprinkle with sea salt and fresh ground black pepper. Cook, stirring frequently, until spinach is wilted. Remove from heat.
  3. Sprinkle inside of pork loin with salt and pepper, then spread the sausage on, leaving a small gap at each side of the loin. The spread the spinach over the sausage. Spread the cream cheese on - it's easiest if you place little blobs of cream cheese on top, trying to get it as evenly spread as possible. Sprinkle on the mozzarella.
  4. Roll the pork loin up like a Swiss roll.
  5. Make a tight lattice/basktetweave with the bacon. Place the loin in the center of the bacon weave, roll the bacon over the loin to cover it. Try to cover the entire loin.
  6. Bake at 350F for ??? (It's still cooking as I type this, not sure exactly how long it will take.)
  7. Servings are 4 oz.

  1. Cook chicken and shred. Stir in enchilada sauce. Set aside.
  2. Heat oven to 350F.
  3. Pour 2 cups of water into a heavy saucepan. Whisk the masa harina into the water until it is smooth and thoroughly blended. Stir in the salt and chili powder. Bring the mixture to a boil. stirring almost constantly. Lower the heat and keep stirring until the mixture thickens to the consistency of batter, about 3 minutes. Remove from heat.
  4. In a small bowl, beat the egg. Stir in the sour cream or yogurt and a cup of the hot masa mixture. Stir the egg mixture and the baking soda into the pot containing the remaining masa mixture.
  5. Put the chicken and cause in a 8" or 9" square baking dish. Pour the masa batter over the meat.
  6. Bake until the casserole is bubbly and the top is slightly browned, about 45 minutes. Let sit for 10 minutes before serving.

  1. Preheat overn to 350F. Spray 9 x 13" baking pan with nonstick spray.
  2. pound chicken to ~1/4" thick.
  3. Sprinkle both sides with salt, pepper, and garlic powder to taste.
  4. Place cheese slices to mostly cover one side of chicken, then spread ham over. Carefully roll chicken up with ham and cheese inside. Use toothpick if needed to hold together.
  5. Bake for 15 minutes; baste with 1 Tbsp butter. Cover and put back in oven for 15 minutes.
  6. Remove from oven and place another slice of cheese on top. Recover and let sit for 10 minutes.

Instructions
  1. Preheat oven to 450.
  2. Line a small pan with parchment paper. Place bacon slices on parchment and cook for 10-15 minutes our until crispy.
  3. Season and grill chicken. Set aside to cool.
  4. For sauce:
  5. In a skillet, melt butter and oil.
  6. Add garlic and shallot. Cook for 2 minutes.
  7. Add flour and cook for 1 to 2 minutes stirring frequently.
  8. Add wine (or beer or broth). Stir.
  9. Add milk slowly and stir.
  10. Season to taste.
  11. Add basil.
  12. Stir and cook for 2 more minutes over medium heat.
  13. Remove from heat.
  14. Spread pizza dough onto pizza pan or stone. Prick with a fork all over.
  15. Spread sauce over dough.
  16. Top with chicken, bacon, shredded colby jack, and sliced mozzarella.
  17. Bake at 450 for 15 minutes.
Recipe Notes

This pizza is so versatile. Change it up by adding veggies like spinach or change up cheeses by adding shredded Parmesan or sliced provolone instead.

  1. Heat crushed tomatoes, tomato sauce, and chili seasoning in a large saucepan at medium heat, stirring frequently until simmering, then cover and cook at 130F for about an hour, so everything has a chance to cook together well.
  2. OPTIONAL: You can use a blander at liquefy or a hand mixer to bland until as smooth as you'd like. If you're using the blender, be careful blending hot liquids! Let the sauce sit for a few minutes before blending, start slowly, and vent the blender frequently when starting.
  3. Crumble and cook the hamburger in a large, deep skillet at medium high heat, stirring frequently. Drain excess fat and return to skillet.
  4. Add cooked elbow macaroni and sauce to skillet with hamburger, cook on medium low to medium heat until thoroughly mixed and warmed.
  5. Server immediately.
  6. Feel free to add any toppings you would like! We used grated parmesan on ours, but you could also use grated cheese of whatever kind you'd like, sour cream, chopped chives, chopped onion, salsa, crackers, etc.

  1. Drain mackerel and remove the largest bones and the majority of skin. Break up in bowl, then add therest of the ingredient, mixing with a fork.
  2. Separate into 4 patties, about 3.5 oz. each. Cook for 4 minutes on a George Foreman grill, or ad a Tbsp of oil to a skillet and fry for 4-5 minutes each side.

Instructions
  1. Cook the hamburger, drain grease, and add sauces. Heat, add any salt, pepper, other herbs you would like. Heat oven to 350F.
  2. Cook lasagna noodles per package directions and drain.
  3. Add a little sauce/meat mixture to the bottom of the pan, then cut the lasagna noodles to fit the 9" square pan. It should take 2 noodles, cut to size, to cover the bottom. Then layer half the meat/sauce mixture, half the ricotta, half the mozzarella, then half the cheddar. Repeat. The pan will prolly be extra full, so make sure you put the pan on a baking sheet.
  4. Cool for about 1/2 hour, or until cheese is bubble and melty and starting to brown. Everything's already cooked, so it's just until it looks like you want to eat it.
  5. Prolly want to give it a few minutes to cool., then chow down!
