Instructions
  1. Mix everything together until well blended. Divide into four equal parts, and make patties. Fry in skillet for a couple of minutes one each side on medium heat (?) or until slightly "crisped". Timing depends on thickness - I made mine about 3/8" thick. Serve hot, with tartar sauce if desired.

Total weight ~12.6 oz, should be 3.15 oz each patty.  As usual, seasoning measurements are definitely approximate! So please feel free to adjust to suit yourself.

  1. Preheat oven to 350F.
  2. Combine everything EXCEPT the ketchup in a bowl, mix with your hand to make sure it's well mixed. It should seem a bit wet, but it it's too wet, you can always add more bread crumbs and/or cheese.
  3. Press mix in loaf pan so that the top is no more than slightly domed in the middle. Place in the oven and bake for 35 minutes. Remove and spread the ketchup on top. Return to oven to finish baking. The meatloaf should have an internal temperature of 160F.
Recipe Notes

Nothing was actually measure, I just put in until it looked and smelled about like I wanted, so please feel free to adjust the seasoning to taste.

You could use any ground meat you wish, but if you have too much fat it might bubble over the sides, so you would want to place the loaf pan on a sheet pan lined with foil.

11.1.18:  First baked.  Took FOREVER!!  Think I'll try at 375 next time and see if that helps the baking time.

Instructions
  1. Chop onion, cook in hot skillet 2-3 minutes, until starting to soften. Add garlic and cook until aromatic. Add lamb, salt, pepper, cumin, and oregano; cook until lamb is done. Drain fat. Set aside.
  2. Steam or blanch spinach until wilted. Squeeze as much moisture as possible out. Finely chop.
  3. Heat oven to 400F.
  4. Combine lamb mix, spinach, cheeses, and egg. Mix well.
  5. Spread out a sheet of dough, then place another sheet along the edge, so you have a very long sheet, the length of two sheets. Brush both lightly with olive oil. Add another sheet, and repeat until all 12 sheets are used.
  6. Roll carefully on long side, seam side down. then coil up into a big roll. Place on baking sheet, brush top with oil, and bake for 15-20 minutes, or until golden brown and crispy.

Instructions
  1. Preheat the oven to 350 degrees.
  2. Cut diagonally into the chicken breasts about 1/4 inch deep in an x shape to allow the bbq sauce to flavor more of the chicken. (like how a holiday ham has the top cut into an x shape).
  3. Add all the ingredients together in a large bowl and toss well together until mixed.
  4. Add the chicken to a sheet pan, then pour the sauce over the chicken breasts.
  5. Cook for 25 -30 minutes or until caramelized, browned and cooked through.
  6. Shred the chicken with the forks and serve in your favorite bun, spooning the sauce over the chicken.
  7. If the sauce didn't cook down enough (if you use a pan that's too small it may not), then add the sauce to a saucepan and cook on medium heat until thickened (likely 15-20 minutes).

I had a bit over 2 lb, so I think I should have had more sauce.  Also, we shredded the chicken, then mixed it together, covered the pan in foil, and put back in the oven for a few minutes, maybe 10-15 minutes.  Awesome!

I plan to do more work on the sauce - I think I can make it better!  🙂

  1. Brown turkey sausage in skillet. Drain excess grease, leaving a little to make the gravy, maybe about a Tbsp.
  2. Add flour, stirring to coat the sausage thoroughly. Add milk slowly, stirring between small additions to avoid clumping.
  3. Heat to boiling, stirring VERY frequently, then turn down heat so it's just simering, and continue simmering until gravy is ALMOST as thick as you'd like - will thicken as it sits.
  4. If it's too thick for your taste, add more milk and warm back up. If not thick enough, add a little flour, and warm back up. In either case, stir pretty much constantly to avoid clumping or sticking or burning or...
  5. Serve on toast or biscuits, doesn't work too well with English muffins. Enjoy!

Instructions
  1. Preheat oven to 350F. If using a really lean meat, prolly wanna use some non-stick spray on the loaf pan.
  2. Mix everything except ~1/2 C marinara sauce together. Place in loaf pan and either shape or prolly better, press so that it's even across the loaf pan.
  3. Bake for 25 minutes, then add remaining marinara sauce and bake another 25 minutes or until internal temp is correct for whatever meat you're using - 160F for ground beef, 165F ground turkey.

Instructions
  1. Allow crust to sit util soft enough to work. Spread in 9" pie or quiche pan.
  2. In a skillet, melt butter over medium heat. Add onion; cook, stirring occasionally, until softened, 6 to 8 minutes. Remove from heat; cool. (I don't usually cool much, not sure how important that is.)
  3. Preheat oven to 375F. Sprinkle 1/2 of the cheese over the crust. Top with onion, then ham. SPrinkle with remaining cheese.
  4. Whisk together eggs, egg yolks, half & half, cream, salt, cayenne pepper, and nutmeg. POur egg mixture over ham and cheese.
  5. Bake quiche until golden brown and custard is set, 35 to 45 minutes. Lert rest 5 minutes.

Instructions
  1. Preheat the oven to 400 degrees F.
  2. In a large mixing bowl, combine the pork, lamb, ground round, cheese, egg, basil, oregano, garlic powder, salt, and 1/4 cup of the bread crumbs. Using your hands, mix all ingredients until well incorporated. Use immediately or place in refrigerator for up to 24 hours.
  3. Using a scale, weigh meatballs into 1-ounce portions and place on a wire rack set in a sheet pan. Using your hands, shape the meatballs into rounds, roll in the bread crumbs and place the meatballs in individual, miniature muffin tin cups. Bake for 17 minutes or until cooked through.
Recipe Notes

I changed from 1 1/2 to 1 oz meatballs, because they were kind of big.

Optional - original recipe called for the meatballs to be rolled in 1/4 C bread crumbs, but I don't think it's necessary, so I removed that.  But you're welcome to add it back!

  1. Preheat oven to 350F.
  2. Coat the bottom of a 13" x 9" baking dish with non-stick spray, then spread ~1/c of one can of enchilada sauce evenly over the bottom of the dish.
  3. Brown turkey, drain. Drain beans. Add beans, taco seasoning, and water to turkey. Bring to boil, simmer 20 minutes or until most of the water has boiled out.
  4. Heat tortillas until soft - I steamed mine (thank you, baby!). Spread ~30g cheese in a line through the middle of the tortilla, leaving ~1/4" on each end of the tortilla free of cheese. Spread 1/5 of the meat & bean mixture over the line of cheese. Fold the ends in, then fold the bottom of the tortilla up, then fold that end up so that the seam of the tortilla is down. Place burrito seam side down in the prepared baking dish.
  5. Repeat for all 4 burritos. Spread the other 1/2 can of enchilada sauce over the burritos, then spread the remaining meat & bean mixture over the top. Spread the remaining cheese over the top, then pour the other can of enchilada sauce over the top.
  6. Bake for 25 - 30 minutes, until sauce is bubbling and cheese is melted and possibly browning, depending on your personal taste.
