Instructions
  1. Arrange a rack in the middle of the oven and heat to 375°F. Cook the pasta and sauce while the oven is heating.
  2. Bring a large pot of heavily salted water to a boil over medium-high heat. Meanwhile, make the sauce.
  3. See Quick & Easy Marinara Sauce; can be cooked while the oven is heating and pasta is cooking.
  4. When the water is boiling, add the pasta and cook until just tender. While the pasta is cooking, make the ricotta filling.
  5. Stir the ricotta, 1/4 cup of the Parmesan, and salt together in a small bowl; set aside.
  6. When the pasta is ready, drain it in a colander or strainer.
  7. Return the pasta to the now-empty pot. Add half of the sauce (about 3 cups) and stir until the pasta is well-coated. Add the meat, stirring to mix thoroughly. Taste and season with salt and pepper as needed.
  8. Add the ricotta mixture to the pasta and fold it in, leaving big pockets of ricotta here and there.
  9. Transfer half of the pasta mixture into a 9x13-inch baking dish and spread into an even layer. Evenly sprinkle with half of the mozzarella. Top with the remaining pasta in an even layer.
  10. Pour the remaining sauce over the pasta and spread into an even layer. Sprinkle the surface evenly with the remaining mozzarella and remaining 1/4 cup Parmesan.
  11. Bake uncovered until the edges are bubbling and the cheese is completely melted and browned in spots, about 30 minutes.
  12. Remove the baking dish to a wire rack and let cool 15 minutes before serving.

  1. Butterfly pork loin and hit with a hammer to even the loin out a bit, to about 1/4" -1/2".
  2. Heat olive oil in skillet, add spinach. Sprinkle with sea salt and fresh ground black pepper. Cook, stirring frequently, until spinach is wilted. Remove from heat.
  3. Sprinkle inside of pork loin with salt and pepper, then spread the sausage on, leaving a small gap at each side of the loin. The spread the spinach over the sausage. Spread the cream cheese on - it's easiest if you place little blobs of cream cheese on top, trying to get it as evenly spread as possible. Sprinkle on the mozzarella.
  4. Roll the pork loin up like a Swiss roll.
  5. Make a tight lattice/basktetweave with the bacon. Place the loin in the center of the bacon weave, roll the bacon over the loin to cover it. Try to cover the entire loin.
  6. Bake at 350F for ??? (It's still cooking as I type this, not sure exactly how long it will take.)
  7. Servings are 4 oz.

Instructions
  1. Season chicken with creole seasoning. Grill over medium to medium-high heat for 8 to 9 minutes per side or until cooked. Remove from heat and let it rest while you prepare the cream sauce.
  2. In a skillet, melt butter and oil over medium heat. Add garlic. Cook for 2 minutes. Add flour and cook for 1 to 2 minutes stirring frequently. Add chicken broth* and stir. Add milk slowly and stir. Season to taste with salt and pepper. Add basil. Stir and cook for 2 more minutes over medium heat. It will begin to thicken. Remove from heat.
  3. Unroll pizza dough onto sheet pan and spread out to about a 10 x 15 inch rectangle. Spread garlic cream sauce over the entire area of dough. Top with chopped grilled chicken. Top with baby spinach and shredded cheese. Beginning with longer end roll up while being careful to continue to tuck ingredients in as you roll it up. Place on a baking sheet seam side down. Spray with a little cooking oil spray under dough. Bake at 350 for 15 to 20 minutes or until golden brown. Let sit about 5 minutes to cool. Slice and serve warm.
