Instructions
  1. Heat a large skillet over medium heat and add the Italian sausage, cook through, drain any grease, then set aside.
  2. While the sausage is cooking, bring a large pot of water to a boil and cook the penne pasta according to package directions, drain then set aside.
  3. In a medium pot over medium heat, melt the cream cheese, tomato sauce, tomato paste and chicken broth together.
  4. Add the oregano, parsley, garlic powder, black pepper, kosher salt and red pepper flakes, stir everything together.
  5. Add the parmesan, mozzarella and ricotta cheese, continue stirring until all of the cheese has melted into the sauce.
  6. Add the cooked sausage and penne pasta to the cheesy tomato sauce and stir to combine.
  7. Serve immediately topped with fresh basil.

  1. Dump it all in a sauce pan, heat to a simmer, stirring frequently. Give the seasonings a half hour or more to cook together, then taste and add more of whatever as needed. Just remember - Oregano gets stronger as it cooks, so you need to have plenty of time to let it cook and release the oils, or you can easily get too much!
  2. If you want - I do - use a blender or hand mixer to smooth out the sauce a bit.

  1. Preheat the oven to 350 degrees F.
  2. Brown the ground chuck in a large skillet. Drain the fat, and then add the tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, and then simmer while you prepare the other ingredients.
  3. Cook the egg noodles until al dente. Drain and set aside.
  4. In a medium bowl, combine the sour cream and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.
  5. To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, and then sprinkle on half the grated Cheddar. Repeat with noodles, meat and then a final layer of cheese. Bake until all the cheese is melted, about 20 minutes.
  6. Serve with crusty French bread.
  7. To freeze: Assemble the Sour Cream Noodle Bake in a disposable aluminum oven-proof pan and seal the top of the container with the lid or heavy foil. Seal the edges to prevent freezer burn and place in the freezer.
  8. To cook from frozen: Place directly in a 375-degree F oven and bake, covered, for 45 minutes. Remove the lid and bake until lightly brown and bubbly, about 20 minutes more.
