Instructions
  1. In a medium size saucepan, sautè the garlic in butter over medium heat for about 3 to 4 minutes. Add the rice and stir well to make sure the rice is coated by the butter.
  2. Add the water, milk, and salt and bring the mixture to a boil. Reduce heat to low, cover and simmer for
  3. 20 minutes, stirring occasionally until the rice is tender.
  4. Add parmesan and parsley, remove from heat, cover and let stand for 5 minutes.
  5. Serve.

Instructions
  1. Preheat oven to 350F. Line baking sheet with foil or parchment paper.
  2. Mix stuffing mix and beaten egg thoroughly. Make into patties, ~1/2" thick. Place on prepared sheet.
  3. Bake for ~12 minutes or until starting to brown and set. Remove from oven and flip.
  4. While the stuffing mixture is baking, mix ketchup, parmesan, Worcestershire sauce, garlic powder, onion powder, oregano, and basil together in a small bowl.
  5. Spread ~2 Tbsp of ketchup mixture on top. Sprinkle cheese over top. Return to oven for ~7 minutes or until cheese starts to melt, bubble, and/or brown.
  6. Remove from oven and allow to cool slightly before serving.
Recipe Notes

Never tried this before, basically wanted to use up some gruyere that I left out of another recipe (damnit).  Will update with notes after I've tried it to see what happens.  Hopefully it works well!

Instructions
  1. Heat oven to 350°F.
  2. For meat loaf, combine turkey, bread crumbs, onion, tomato sauce, egg, garlic, Parmesan cheese, pepper and red pepper flakes thoroughly in a large bowl.
  3. For filling, mix spinach and cream cheese in a separate medium bowl.
  4. Press meat mixture into an 8 x 14-inch rectangle about 1/2-inch thick on a large sheet of waxed paper.
  5. Spread filling over turkey, leaving a 3/4-inch border around edges.
  6. Roll from the short end in jellyroll fashion.
  7. Press turkey over filling at both ends and seal.
  8. Place seam side down in open baking dish/roasting pan.
  9. Sprinkle top with additional Parmesan cheese.
  10. Bake 30 minutes. Spread 3/4 C tomato sauce over top until well covered, sprinkle with salt, pepper, and garlic powder. Bake another 30 minutes, until meat thermometer inserted in center of meat loaf reads 160°F.
  11. Cut into 1-inch thick slices to serve.
Recipe Notes

Can add 1/2 C shredded mozzarella and 4 oz. cream cheese to spinach.

  1. Preheat oven to 450F.
  2. Line a baking sheet with aluminum foil and spray with cooking spray.
  3. Cut potatoes into small cubes, about 3/8" - 1/2".
  4. Place potatoes in a medium bowl and toss with oil.
  5. Combine Parmesan, paprika, garlic powder, salt, black pepper,and cayenne pepper in a small bowl.
  6. Add the Parmesan mixture to potatoes in bowl; toss to coat potatoes evenly.
  7. Arrange potatoes on prepared baking sheet, keeping to a single layer.
  8. Bake, turning once, until potatoes are lightly browned and easily pierced with a knife, about 25 minutes.

  1. Heat oil in a medium saucepan over medium heat. Add onion to pan; cook 8 minutes or until tender, stirring occasionally. Add flour and garlic; cook 1 minute, stirring constantly. Stir in milk and bay leaf; bring to a boil. Cook 2 minutes or until thick, stirring constantly with a whisk. Add Gorgonzola, 1/2 cup Parmigiano-Reggiano, and salt; stir until cheeses melt. Discard bay leaf.
  2. Preheat oven to 375°.
  3. Cook pasta in boiling water 5 minutes or until almost tender, omitting salt and fat; drain well. Add pasta to cheese mixture, stirring well. Place about 1/2 cup pasta mixture into each of 6 (1-cup) ramekins coated with cooking spray. (For a weeknight supper, bake the macaroni in an 8-inch square baking dish for 35 minutes.) Sprinkle evenly with mozzarella. Top evenly with remaining pasta mixture. Combine remaining 1/4 cup Parmigiano-Reggiano and panko; sprinkle evenly over pasta mixture. Spray lightly with cooking spray; sprinkle with black pepper. Bake at 375° for 25 minutes or until heated.
  4. I doubled the sauce recipe, but it still seems dry, might want to add more milk? An tuna or shredded chicken would be a great addition!
