- 1/2 lb new potatoes or B size
- 1 Tbsp olive oil
- 1 Tbsp butter
- kosher salt
- Fresh Ground Black Pepper
- fresh herbs of your choice optional

Instructions
- Boil the potatoes until fork tender.
- Heat oven to 450F.
- Spread the olive oil over a sheet pan.
- Place the potatoes on the sheet pan, giving plenty of space for them to expand. Press on them with a potato masher. Turn the potatoes, or the pan, 90 degrees and press on them again until they're almost flat and look cookie-like.
- Bake at 450F for approximately 20-25 minutes, until they are are golden brown and sizzling.
