Apple-Cheddar Salad with Walnuts
Ingredients
- ¼ c. apple cider or apple juice
- 2 tbsp. cider vinegar
- 1 tsp. Honey
- ¼ tsp. salt
- .13 tsp. coarsely ground black pepper
- 1 medium head Boston lettuce
- 1 lb. Pink Lady, Honey Crisp, or Empire apples
- ¼ c. walnuts
- 3 oz. shaved extra-sharp Cheddar cheese
Directions
- In large serving bowl, whisk together cider, vinegar, honey, 1/4 teaspoon salt, and 1/8 teaspoon coarsely ground black pepper. Add lettuce and apple slices to bowl and toss to coat. Arrange salad on 6 plates; top with walnuts and Cheddar cheese.
