Instructions
  1. Preheat oven to 325F. Line baking pan with parchment paper and spray with non-stick spray.
  2. Combine “almost” the entire can of milk (minus ~2 Tbsp) with the coconut and vanilla. Stir to combine.
  3. In a separate bowl whisk egg whites and salt until soft peaks form. Fold gently into the coconut mix.
  4. Spoon or scoop the mixture, ~2 Tbsp each, onto the prepared baking sheet. Bake for ~25 minutes. Remove from baking sheet and let cool on wire rack.
  5. Enjoy!
Recipe Notes

Pretty darn good!  I’m gong to try baking them at a lower temperature, for a bit longer.  I did try making them a bit thinner and cooking a bit less, didn’t work as I’d hoped, so we’ll go for lower temp for longer.  Otherwise, they were really good!
